Spring by China Mama: A Fresh Twist on a Classic Favorite The food at Spring by China Mama is absolutely GREAT! While I'm still a big fan of the original China Mama, this spot offers a cool and modern riff on the solid excellence we've come to expect from their food. The ambiance here is very cool--stylish and inviting, making it perfect for a night out. The service is awesome and attentive, adding to the overall experience. If you're a fan of China Mama or just great Chinese food in general, Spring by China Mama is definitely worth checking out.

Easy to get reservations, definitely do so since it seemed pretty popular during prime dining time. The decor is cute and slightly elevated compared to your normal Chinese restaurant. The dishes were really decorative. So I have a feeling this place has dishes that appeal to those into more authentic Chinese food and those that like Panda Express but want a fancier dining experience. Here are the items we ordered for those looking for a more authentic experience: 1. Sliced beef and ox organs in chili sauce - cold appetizer but great flavor and texture 2. Roast duck with crepes - pretty typical - maybe not super special but tasty nonetheless 3. Slice Fish Fillet in Chili sauce - fish is super tender but I'm guessing it is swai/basa (if you don't like that type of fish avoid) 4. Cumin Lamb-great flavor, beef is very thinly sliced 5.Stir fried green beans-flavorful and done well 6. Yu Xiang Egg plant in stone pot-again great flavor 7. Salted egg yolk shrimp with corn - fried shrimp with a hint of the egg yolk flavor in the batter Dish i would not order again: Gua Bao Pork-this is just sweet and sour pork that isn't even done well. Pork tenderloin thin slices, so super dry tasting fried with sweet and sour sauce. I'm guessing anything here with sweet and sour is more geared towards those with a more Americanized palette. Service was good, food came out really quickly. It was kind of strange though because they originally brought our bill with gratuity include for a party of 6. We don't have any issues with that...but then they took it away and said they aren't allowed to do that and recalculated without auto gratuity. They do charge 3% for paying with a credit card so keep that in mind.

A fantastic late lunch we had at my 1st time at Spring. I have been waiting to come here since the opening last year. Everything we ordered was so tasty. From the String Beans, to the Crispy Beef, the spring rolls and the fish with ginger and scallions. The service was great and we even had a long talk with Alex who I believe is the manager of the establishment. A very welcoming place and my friend and I were very impressed and will be back soon. Also a very beautiful setting from the plates to the decor.

We got greeted and seated right away. The decor is impeccable and I am obsessed with the plates! 10/10 here We ordered shrimp fried rice, hot & sour soup, sweet & sour chicken and green beans. The soups - came out with a lid, very luxe feeling. However, we both wished they were hot. It was just a tad above room temp :( Shrimp fried rice - yummy. Standard fried rice, i liked how the fresh the shrimps tasted Green beans - like how they should taste. i liked that they were charred! Sweet & sour chicken - the fave dish that we ordered. Crunchy, yet saucy and nicely caramelized. the red peppers in the dish was nicely caramelized but still retained the crunch! Overall, the food tasted how they should and the service was good. We will be back.

So China Mama is a local staple as they have many variations all over Vegas including the recent addition of the version at the Station Casino right off the strip. This particular place is a collaboration joint where they have the classic China Mama dishes and other collab dishes which results in items like the Chef's special taro duck and the wrap dishes. The good is, there is much more of a manageable wait than the Chinatown China Mama location. The service is similar and still friendly and its less chaotic for parking and should be straightforward. We have been here a few times and the classic China Mama dishes are still are " go tos". We usually order the Mapo tofu, the guo bao pork, the crispy beef, the pot stickers and the green beans. We have tried a few of the noodle and rice dishes as well. The noodles and rice dishes are fine but forgettable. All the other items mentioned here are all delish just like the other joints. It is a bit of a bummer this joint doesn't carry any adult beverage menu whatsoever but the tea is tasty. All in all, a solid joint, love the dishes, and the fact it's easier to dine here without waiting in insane lines. Will keep this in the rotation.

Very flavorful dinner. Good service and reasonable prices. Paper napkins??? Come on folks... Get real cloth napkins. I'd return, or try out a different location next time.

Crispy Beef!!! All the way! Sizzling Beef Tenderloin!! Delicious! We loved the ambiance, beautiful China plates and decor, we felt a little underdressed as we were driving cross country but still felt very welcome. The staff was attentive and friendly. Parking was easy out front. No wait. We'll definitely be back!
